The ingredients needed to make Chicken Karaage:
  1. Take 400 g chicken breast mini fillets
  2. Take 2 tbs light soy sauce
  3. Take 2 tbs dark soy sauce
  4. Take 1 inch ginger root grated
  5. Take 1 garlic clove crushed
  6. Take 2 tbs sake or rice wine vinegar or mirin
  7. Prepare 1/2 cup potato starch
  8. Prepare Oil for shallow frying

Drain any excess liquid from the chicken and add your katakuriko potato starch. The word "karaage" (唐揚げ) is a generic word for deep fried food coated with or without flour. It does not have to be chicken. So karaage chicken is called "tori no karaage" (鶏の唐揚げ, fried chicken) in Japanese, qualifying that it is chicken (tori, 鶏).

Steps to make Chicken Karaage:
  1. In a bowl combine the soy sauces, ginger, garlic, and choice of liquid with the chicken.
  2. Cover and refrigerate and leave to marinade for a min of 1 hour. The longer you leave it the tastier will be. Do not leave for longer than 24 hours.
  3. Take marinated chicken out of the fridge and leave to get to about room temperature.
  4. Heat the Oil in a pan until about 170°c
  5. Dredge the chicken pieces in the potato starch and place on a plate while oil heats up.
  6. When oil is hot add chicken pieces one by one. Do not over fill the frying pan.
  7. Cook evenly to get a nice golden crispy coating. Check the internal temp is 70°c/80°c
  8. When cooked drain on kitchen paper towel or frying basket.
  9. Serve with cucumber and a wedge of lemon
