Fried Whitebait is one of the most popular of current trending meals on earth. It’s appreciated by millions daily. It is easy, it’s quick, it tastes yummy. Fried Whitebait is something which I have loved my whole life. They are fine and they look wonderful.
Heat a saucepan filled halfway with vegetable oil over medium heat. Put the flour into a plastic bag with the salt, hold it closed and shake to mix. Put a handful of whitebait into the bag, close and shake to coat with the flour.

- Take all-purpose flour (to coat)
- Get sea salt
- Get 12 whitebait (more or less depending on how many whitebait you want to use)

- Get optional: fresh lemon juice, to sprinkle over fish
- Prepare optional: mayonnaise, to serve alongside the whitebait
Whitebait is an old English term for little tiny fish, dusted in flour and fried crispy. But it's also a popular dish around the Mediterranean like in Italy and in the Pacific like Australia and New Zealand. I lightly dusted the whitebait in flour and then fried them for a few seconds. The small, crunchy fish are served with an easy aioli of egg mayonnaise, cilantro (coriander), garlic and lemon juice.
Instructions to make Fried Whitebait:
- Wash and prepare the whitebait. Dab with kitchen roll to remove any excess water and place in a bowl.
- Sprinkle with salt, add as much as you prefer. Leave in the fridge for 30+ minutes to absorb some of the salt.
- In a shallow bowl add a good amount of flour.
- You can deep fry the whitebait however I chose to do mine in a shallow fry. So if shallow frying pour about 200-300 ml of oil into a frying pan and heat on a medium to high heat.
- Coat the fish evenly in the flour and carefully drop into the hot oil as you go along.
- Fry for 4-5 minutes on each side.
- Dab with kitchen roll to absorb some of the oil.
- Optional: sprinkle with the fish with the lemon juice, serve with mayonnaise.
- Serve almost immediately. It's great as a starter.
Fried whitebait are particularly delicious washed down with a cold glass of beer. Whitebait are very small fish, no bigger than your little finger, and although frying seems to be a sinful word, it is the only way you can cook them. You use a little oil and you fry for two to three minutes. If the whitebait are very small, you can just eat them whole, head and bones included! Pat whitebait dry with paper towel.
