  8. Get a few coriander leaves (optional)

Fold it all together and season with black pepper and salt if needed. To prepare the tartare, mix the salmon in a bowl with the parsley, remaining coriander stalks, red onion, mustard, lemon juice and olive oil. Squeeze over plenty of fresh lemon juice and a good grind of black pepper and you'll have a tasty beginning to your meal with hardly any work. Take the salmon, remove the skin and cut out the grey coloured blood line so you have only the shiny pink flesh.

  2. Cut the salmon into very small pieces and add the juice of one lime and a tiny bit of zest
  3. Cut the onions very finely - I used sharp kitchen scissors
  4. Add the fresh dill, use the scissors again
  5. Add pepper, and salt if you need to, and mix very well
  6. Wash and peel the avocado. Take the stone out and cut like this - first longways and then across, into small pieces
  7. Put a layer of avocado in your serving ring (?) And press down
  8. Cover with a layer of salmon
  9. Repeat process with 2 more layers. Press down firmly and then take the ring off. Put some capers on top. I also added some fresh coriander leaves but only because I tend to use it with everything when it's in season. Enjoy!!
