  5. Coat the fish evenly in the flour and carefully drop into the hot oil as you go along.
  6. Fry for 4-5 minutes on each side.
  7. Dab with kitchen roll to absorb some of the oil.
  8. Optional: sprinkle with the fish with the lemon juice, serve with mayonnaise.
  9. Serve almost immediately. It's great as a starter.

Fried whitebait are particularly delicious washed down with a cold glass of beer. Heat oil in a frying pan. Coat the fish with flour and fry them until golden brown. Whitebait are very small fish, no bigger than your little finger, and although frying seems to be a sinful word, it is the only way you can cook them. You use a little oil and you fry for two to three minutes.
