This simple vegan pesto recipe tastes surprisingly like the real thing. Traditionally made with Parmesan cheese, pesto is a basil, pine nut, and cheese mixture that originated in Italy. One of the most flavorful and easy sauces there is, pesto can be easily made into a vegan preparation by swapping the cheese with nutritional yeast, a vegan-friendly ingredient with a strong cheesy tang. This vegan pesto recipe is a streamlined version of my regular recipe, without the Parmesan cheese.

Instructions to make Vegan Pesto 💚:
  1. Roughly chop the herbs and garlic.
  2. Add all of the ingredients together. Using a blender or hand whizzer mix the ingredients together to a smooth paste. I added A LOT of cracked black pepper, but that is personal preference. Use straight away, or store in a jar with some more oil mixed though for a few days.
  3. If you serve it with pasta I really recommend mixing the pesto into the pasta in the pan. Before you drain the pasta take a few tablespoons of the pasta water from the pan and set aside. Then drain it and transfer the pasta back into the pan. Take your desired amount of pesto and mix into the pasta with the pasta water to make it more creamy (and spread a bit further) Serve with lots of black pepper on top!

It's lighter than traditional pesto, it comes together in minutes, and it's totally delicious. Whether you're vegan or not, I think you're going to love it. You'll find my go-to vegan pesto recipe at the bottom of this post. While some vegan pesto recipes call for replacing the cheese with nutritional yeast, I think the beauty of cheese-less pesto is that you can really taste the brightness of the fresh basil. So instead of "nooch," I simply reach for a lemon.
