- Take 1/2 cup Water
- Take Dipping Sauce
- Prepare Ponzu (see recipe)
- Get Rā-yu (Chilli Oil)
On the other day, I made leftover Abura-age (Fried Thin Tofu) into Gyoza. The texture is much better than Firm Tofu-based Gyoza, and Abura-age (Fried Thin Tofu) are widely available from many stores. Fried gyoza (Shutterstock) To make gyoza, you'll need six things at hand: the filling, the wrappers, a small bowl of water, a baking sheet lined with baking parchment or dusted with cornflour (cornstarch), a small spoon and a slightly damp dish towel or paper towel. Probably you are familiar with a type of Sushi called 'Inari-zushi', which is Sushi Rice wrapped in seasoned Abura-age (Thin Fried Tofu).

- Cut all Vegetables 7-8mm size. Combine with Garlic, Ginger, Sesame Oil and seasonings. Mix it well and set aside.
- Water comes out from Vegetables and the mixture becomes moist. Cut Abura-age (Fried Thin Tofu) into 7-8mm pieces, add to the mixture, and mix well. Add Flour of your choice and mix well.
- Place a heaped teaspoonful filling (OR as much as you can wrap) onto a Gyoza Wrapper, moisten the edge of the wrapper with water, fold the edge 5-6 times and close. Repeat with remaining ingredients.
- Heat oil in a frying pan (non-stick recommended) over medium high heat, and arrange Gyoza in the pan.
- Add 1/2 cup Water and reduce heat. Cover with a lid and allow Gyoza to steam until the Water is gone. Keep cooking until the bottom of Gyoza turned golden brown.
- Serve with Ponzu with Rā-yu (Chilli Oil).
This is the Soba Noodle version of it and it is quite popular in Japan. Soba Noodles are seasoned with Noodle Dipping Sauce. It is very easy to prepare. Gyoza (餃子) is the name for Japanese pan-fried dumplings. They are originally from China but evolved to suit Japanese taste.
