  6. Take C. Seasoning Sauce - mixed
  7. Prepare 2 tsp corn flour + 2 tbsp water
  8. Take 1 tbsp dark soy sauce
  9. Make ready 1 tbsp sweet soy sauce
  10. Take D. Extras
  11. Take 1 tsp sugar
  12. Prepare 1-2 tsp sesame oil
  13. Make ready 1-2 tbsp water

  15. Make ready 1 tsp Sesame seeds
  16. Make ready 1-2 tbsp Chopped coriander

Dice the chicken, and mix with flour, to evenly coat it. Heat your wok over a medium heat and toast your cashews then remove and set to one side. Add some oil to the pan and cook the chicken. Add onion, spring onion, garlic, galangal, small red chilli and kaffir lime leaf.

Instructions to make Chilli Chicken with Cashews:
  1. A - Dice chicken breast and fry in few batches for a minute or two or until the chicken is cooked and turn white in colour. As soon as chicken turn white, remove from the pan immediately to avoid over cooking the chicken. Overcooking or overfrying will result in rubbery hard chicken.
  2. B - Prep the rest of the ingredients in B; mince garlic, cut dried chillies, only if the chilies are big, and measure cashew nut.
  3. C - In a small bowl, mix 2 teaspoons of corn flour with 2 tablespoons of water. Add the rest of the ingredients in C to corn flour mixture. Mix well and keep aside.
  4. Cooking the dish - Heat 3 tablespoons of oil in a wok. Sauté B, starting with minced garlic. Then add cashew nuts and dried chillies. Stir to mix for a minute or two. Add A, diced chicken. Stir and mix well for another minute over medium heat. Next, add C, seasoning sauce, and keep stirring until sauce is thickened and looking sticky. Note: Stir and mix C well (seasoning sauce) before adding it to the wok.
  5. Add D. Taste and adjust seasonings accordingly. Remove from the heat and transfer to a serving plate. Garnish with sprinkles of sesame seeds and chopped coriander. Serve warm.

Sauté till the onions are soft. Next, add the chili paste as well as the chilli oil and stir till it becomes deep red and the oil separates. Add the fried chicken and chillies and toss well in the ingredients, on high heat. Remove the chicken from the wok, and set aside. Pour the remaining tablespoon of oil into the wok, and stir in the onion, green pepper, cashews and water chestnuts.
