  9. Take 2 tbsp grated coconut
  10. Get Salt and coriander leaves and ghee to taste

I opted out of Ghee and replaced it with coconut oil to keep it vegan. This Kitchari can be made to be tri dosha friendly. Kitchari (also called khichdi or khichri) is a one-pot dish usually made with split mung beans, rice, and spices. It is a simple meal that is meant to be nourishing and easy for the body to digest.

Steps to make Kichadi/ Kitchari - vegan:
  1. Put the rice, beans, vegetables, curry leaves and water in a big pot. Heat to a boil, then simmer for 30 mins.
  2. Add spices and coconut. Simmer for 5 mins.
  3. Serve with coriander and salt to taste. Stirring through a tsp of ghee through is nice too.

After the seeds start popping, add star anise, clove, cinnamon, bay leaf, dry red chili and Neem leaves. Kitchari (also known as khichuri, khichri, or khichdi) is a dish with ancient roots in India.
