Pour in the tins of mixed beans, sweetcorn and chopped tomatoes. Dissolve the stock cubes in the hot water and then empty this into the slow cooker. Heat the oil in a large frying pan over a medium heat. Add the onion, carrot and celery.

- Chop the onion and peppers into small squares. Heat 2 tbsp oil in a pan and add. Cook for 5 mins until softened.
