- Prepare 4 cup cooked white rice
- Prepare 1 medium thinly slice onion
- Make ready 4 clove thinly slice garlic
- Take 1 cup spring onion / scallion
- Get 2 tbsp coconut oil or any oil
- Prepare 4 small dice mix red, orange and yellow jalapeño
- Prepare seasoning
- Prepare 2 tbsp light soy sauce
- Get 1 dash salt
- Get 1 dash black pepper
Fried rice can be frozen for up to three months in freezer safe containers. Reheat in the microwave until warm. You can also reheat in an oiled skillet to recrisp the rice. To do this, add the cold rice and saute until warmed through.

- Used over night leftover rice or cook rice as usually then fluff up and set aside to cool
- In pan with oil lightly brown garlic and onion.
- Add cooked white rice and seasoning
- Stir fry rice till all sauce mix well then add mix jalapeño and spring onion /scallions for 2 minutes till all mix well then off heat
- Vegan fried rice with mix jalapeño and scallion
This means adding the vegan butter to the wok, chopping & dicing the veggies, and mixing together the soy sauce, rice wine vinegar, and sugar for the vegan fried rice sauce. Pop in the carrots, baby corn and spring onions and stir fry for a couple of minutes more. Pour in the soy sauce and, once again, stir through well until combined.
