To make these quesadillas, all you need to do is fry up the vegetables with spices, add them to a tortilla with vegan cheese, and then toast them. Serve alongside some Loaded Sweet Potatoes, some Easy Vegan Enchiladas, or this tasty Mexican Black Bean Salad.

Instructions to make Vegan Quesadillas:
  1. Heat 1/2 tbsp oil in a pan, add 1 tbsp soy sauce, onion, garlic, pepper, and mushrooms and fry over medium heat for 3-4 minutes. Add the mixed black beans, and spice mix and fry for a further 3-4 minutes.
  2. Make a batch of my easy vegan cheese sauce and spread some of it in an even layer on one tortilla. You can use any other vegan cheese of choice.
  3. Add a layer of the veggie mixture (about 4 tbsp) and place another tortilla on top.
  4. Transfer to a (lightly oiled) skillet and cook for about 2-3 minutes, flip and cook from the other side until both sides are nicely browned and toasty. Cut into 4 pieces and enjoy hot!

Lay the tortilla on a flat surface, cover half of it with some shreds of vegan cheese, the "ground meat" and more cheese and fold it close. Warm a pan over medium/low heat and add a gentle splash of oil, place the tortilla, press lightly and cook with a lid until the bottom is brown and crisp. Crispy on the outside, stuffed with creamy avocado and flavor-packed veggies, these vegan, fully loaded avocado quesadillas are sure to be a hit! Totally dairy-free, but you'll never miss the cheese! Heat ½ tablespoon of oil in a frying pan over a medium heat.
