- Pre-heat oven to 220c. Peel and mash the bananas. In a separate bowl cream the sugar and olive oil spread. Make the flax eggs by combining the flax with enough water to make a runny paste. Set aside and this with thicken.

The moistness comes from those bananas, the coconut oil, some homemade vegan buttermilk and the addition of some applesauce to the recipe. In a large bowl, mash the bananas in a bowl with a fork or potato masher. Add the sugar and mix in well. Mash the bananas in a medium bowl with a fork, then mix in the oil and sugar until combined. Put the mashed bananas in a large bowl and add the sugar, flour, sultanas, pecan nuts (if using), mixed spice and baking powder.
