- Get 1 bell pepper

Peel and roughly chop the onion. Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers.
Instructions to make Vegetarian Chili:
- Peel and chop the onions. Cut the bell pepper and the peeled carrots into small cubes.
- Heat some olive oil on a pan and add the cut vegetables. Let them cook for 10 minutes, stirring from time to time.
- Add drained corn and mix well. Add salt, cumin and chili and mix again. Add the tomatoes with their juice and bring it to boil. Let it simmer for about 15 minutes.
- Add the red beans and keep cooking for 5 more minutes.
- Serve hot with some fresh bread.
