Dhansak is a traditional parsi recipe Usually served with brown rice. It is a medley of lentils, vegetables, spices and meat. Being a vegetarian I cannot include meat, so have just made it with lentils, veggies and the spices.

To get started with this recipe, we have to first prepare a few ingredients. You can have vegetarian dhanshak using 19 ingredients and 21 steps. Here is how you can achieve it.

The ingredients needed to make Vegetarian Dhanshak:
  1. Prepare chana daal/ split chickpeas lentil
  2. Take masoor daal/ split red lentils
  3. Prepare Tovar daal/Pigeon pea lentils
  4. Make ready urad daal/split black gram lentils
  5. Prepare cleaned and chopped fenugreek leaves
  6. Take washed, deskined and cubed veggies of your choice(normally pumpkin and brinjal are a must)
  7. Make ready Salt
  8. Prepare turmeric powder
  9. Prepare red chilli powder
  10. Get mint leaves cleaned and chopped
  11. Prepare lemon Juice
  12. Make ready ginger grated
  13. Take garlic pearls chopped finely
  14. Prepare green chillies made to paste
  15. Take Dhanshak powder
  16. Get large onion chopped finely
  17. Get small tomato chopped
  18. Prepare ghee/butter
  19. Prepare Water (depending upon the quantity of lentils and veggies you use)

Vegetarian Dhanshak A Chef and A Mom Pune. #protein Dhanshak is a Parsi traditional dish cooked with meat. Dhansak is a delicious Parsi dish made using a mix of lentils and vegetables and the classic recipe is Mutton Dhansak. But because we vegetarians shouldn't deprive ourselves from trying out this utterly superlative tasting dish, of course we need to have a vegetarian dhansak version too! During the lockdown, one way we friends alleviated food boredom was by sharing food we made in our homes.

Instructions to make Vegetarian Dhanshak:
  1. Pre soak the lentils at least for 30 minutes prior cooking them after washing thoroughly
  2. Strain the lentils and keep aside
  3. Add the lentils to a pressure cooker and add about 2 cups of water to it. Start the stove now and keep on medium heat
  4. Add the turmeric powder and salt to taste. mix well
  5. Next add half the onions chopped to the lentils
  6. Add mixed chopped vegetables and mix for a while
  7. Next throw in the fenugreek and mint leaves and mix well for about 2-3 minutes
  8. Now pressure cook for upto 4-5 whistles and switch off the stove
  9. For the masala/tempering:
  10. Melt ghee/ butter in a wok and add the remaining onions and sauté till they are slightly brown
  11. Next add the tomatoes and cook on Low heat covered till they are soft
  12. Add chopped garlic-ginger and cumin powder
  13. Followed by red chilli and Dhanshak powders
  14. Add the green chilli paste.Mix well and take off heat
  15. Open the cooker to check the lentil mix. If slightly uncooked, use a masher to mash the lentils and vegetables
  16. Put it back on stove and keep on Low heat
  17. Add the masala/tempering prepared to the lentils and mix well and let simmer
  18. Next add the lemon juice
  19. Finish by mixing coriander leaves.
  20. Serve warm with the accompaniment of your choice
  21. My tip: if you are unable to find Dhanshak masala, use a strong flavoured curry or regular garam masala powder
