The ingredients needed to make Oven-Baked Jambalaya:
- Get Chicken Thigh Fillets
- Make ready Salt & Pepper
- Take Olive Oil
- Take Onion *finely chopped
- Prepare Garlic *finely chopped
- Prepare Smoked Pork Sausages *about 150g, sliced
- Get Celery *thinly sliced
- Prepare *Note: If you use Chorizo, reduce the amount of Cayenne Pepper
- Take Red Capsicum *cut into small pieces
- Take Cajan Spice Mix
- Make ready Cayenne Pepper OR Tabasco as required
- Prepare Chicken Stock
- Make ready (*180ml cup) Short Grain OR Medium Grain Rice
- Prepare Parsley *finely chopped
In a large baking dish, combine the tomato sauce, diced tomatoes, soup, broth, mushrooms, onion and butter. Add the sausage, chicken and rice and stir to combine. You must use a converted rice LIKE Uncle Ben's (you can use other brands as long as they are CONVERTED RICE). Do not substitute or you will get sticky, mushy results.
Steps to make Oven-Baked Jambalaya:
- Preheat the oven to 200C. Wash rice, drain, and set aside.
- Cut Chicken Thigh Fillets into bite-size pieces, lightly season with Salt & Pepper.
- Heat Olive Oil in an oven-safe shallow saucepan or a skillet over medium heat and cook Chicken until slightly brown, and transfer to a plate.
- Cook Onion, Garlic, Celery and Smoked Pork Sausages until onion is soft. Add Red Capsicum and stir, and add Cajan Spice Mix and Cayenne Pepper (OR Tabasco). *Note: Alter the amount of Cayenne Pepper accordingly.
- Add Chicken Stock, (if you want to add Tomato Paste, add it now), and bring to the boil. Stir in Rice evenly, return Chicken, then bring back to the boil. Season with Salt & Pepper as required.
- Cover with the lid or cover tightly with foil. Place in the oven, and cook for 20 minutes. Remove the lid and cook for 5-10 minutes.
- Sprinkle with chopped Parsley and serve.
This is the baked version of Jambalaya but you can also make it on the stovetop. Note that the rice will cook faster on the stovetop but you will need to keep an eye on it to prevent it from burning. The Oven takes a little longer but does not require stirring until it's done. Place ingredients into an oven-proof skillet or baking dish; cover tightly with foil. Once it is cooked, it can remain in a warm oven, loosely covered, until serving.
