Cook the pancetta or bacon in a frying pan with the onion, peppering well. Beat the spring onion, parsley and eggs together, and set aside while you roll out the pastry.   6. Once egg mixture on the pastry is nice and firm..i add the toppings (mushrooms, onions and tomatoes on top of egg / bacon evenly and sprinkle dried garlic and mixed herbs on top. I place back into oven until topping looks just to your liking.
  7. Add chips / fries or a fresh salad in the side.
