Start this crispy shredded beef dish by mixing together the cornflour, eggs and salt, and toss the beef in this until all of it has been well coated. Then remove the beef and place on paper towels, and allow to drain all the oil. Heat oil over medium heat and shallow-fry the beef strips.   5. Make sure the oil is hot when you put the meat in, and cook it in batches. Because the meat is so thinly cut, it only takes 1-2 minutes to cook it. Scoop up from the pan and let dry on some kitchen towels.
  6. When the beef is done, pour most of the oil out of the pan, turn the heat down and cook the onions for a couple of minutes. Pour the sauce over the onions and let simmer for a minute.
  7. Add the beef to the sauce and plate up!

Add the beef strips, making sure that the sauce is coated on well. Mix the orange zest with the flaky sea salt and sprinkle over the beef.
