Working very quickly, transfer the pasta from the colander to the still warm mixing bowl, and toss the hot pasta with your egg mixture and ½ cup of the hot pasta water until the cheese is melted and the sauce is smooth and creamy. Add the minced spinach, and toss again. Drain, save some pasta water, and set aside. Saute meat mix with enchilada sauce, soups, onion, chili, olives,. minutes or baking.
