  1. Make ready 1 kg Chicken (whole leg,thighs or drumstick)

This involves using a wood burning clay oven that is cylindrical in shape and built into the ground. The tandoor oven is what gives this amazing dish its unique flavour, texture and smoky fragrance. Tandoori chicken gets its name from the bell-shaped tandoor clay oven which is also used to make naan, or Indian flatbread. Skinless legs and thighs are marinated in a tenderizing mixture of yogurt, lemon juice, and spices and the meat is slashed to the bone in several places helping the marinade penetrate and the chicken cook more quickly.

Steps to make Tandoori Chicken:
  1. Clean the chicken with turmeric powder and drain the water completely.
  2. Now gash the chicken into flesh part or thick portion,so that the marination goes in evenly.
  3. In a mixing bowl add red chilli powder, cumin powder,coriander powder, pepper powder, ginger garlic paste,turmeric powder,tandoori masala, food colour, hunk curd,lemon juice,salt, garam masala and mix everything together and make it into paste.
  4. Take each chicken pieces and marinate separately.
  5. Refrigerate for 5-6 hrs or overnight.
  6. Preheat oven for 10 minutes(350-400 degree F)
  7. Line up the baking tray with silver foil and keep the chicken pieces on wire rack for 25mins(350 degree F)on one side and 25 minutes on other side.
  8. Show the chicken pieces on direct heat and serve with mint chutney.

Combine the tandoori paste ingredients in a food processor and process until smooth. In a large bowl, combine the tandoori paste, lemon juice, yogurt, and salt. The raw chicken is marinated in yogurt flavoured with spices. I like to use a really thick Greek yogurt for this so you get a generous layer of the marinade on the chicken which in turn changes to a "crust" when you cook it.
