  1. In a bowl mix the zest, lemon juice, crushed garlic cloves,rosemary, thyme, salt and pepper

  4. Preheat the oven to 425F
  5. Transfer the chicken to a baking dish, and brush each piece with the melted butter
  6. Reserve the left over marinade
  7. About 30 mins later, pour the left over marinade over the chicken and continue baking
  8. Bake for an hour or so, until the chicken skins are crispy and are a nice golden brown
  9. Once baked, cover with foil, let it rest for ten mins before serving
  10. Serve with a salad
