Add the potatoes and spices and stir to combine. Pour in the tomatoes, coconut milk and sugar. Season generously with salt and white pepper. Add remaining stock plus ketchup/tomato puree, stirring well to combine.

Steps to make Chicken, potato & crispy ham supper:
  1. Pre-heat oven time Gas mark 6 or electric equivalent (probably 180-200C, 170C Circotherm)
  2. Place the chicken pieces skin up in a roasting tin, put a little oil on the skin of each piece and fill the gaps in between with the chili, potatoes and beans. Finally, spread the ham pieces over the top.
  3. Mix together the stock, mustard, crème fraîche and garlic. Pour over the chicken and vegetables and add seasoning. Finally, gently spoon the honey over all.
  4. Cook in pre-heated oven for 45 minutes or until the chicken and potatoes are cooked. Sprinkle the coriander over all and serve onto hot plates.

Finally, add the coconut milk, fish sauce, sugar, cinnamon stick, and lime leaves or bay leaf. Spoon the chicken mixture into a large baking dish, then layer the potatoes on top, starting from the outside and working inwards. Once covered in the potato slices, brush with the melted butter and sprinkle on a pinch of salt and pepper. Also used a cheese sauce mix, bottom layer of potatoes, chicken and mushroom mix with some cheese sauce then more potato and cheese sauce over the top. I did the Chicken Tonight version as my cheese sauce always seems to take ages to.
