Seal the bag and massage the chicken with the marinade to coat well. In a small bowl whisk olive oil, lemon juice, minced garlic, honey, soy sauce and Italian seasoning. - Pour it over the chicken and stir quickly. Now add honey and stir keeping the flame low. Sprinkle sesame seeds. Cook only for 2 minutes after adding the honey.
- Taste at this stage, add more seasoning and lemon if required. Sprinkle red chilli flakes and serve hot.
Return all the chicken to the pan, add the sherry vinegar and bubble until reduced by half. Drizzle over the soy sauce and honey and shake the pan to combine the juices. Combine the egg white, cornflour, salt, a little sesame oil and chicken in a bowl - stir to make sure the chicken is well coated. Heat a wok until very hot, add some.
