To get started with this particular recipe, we have to first prepare a few ingredients. You can cook coconut ice using 4 ingredients and 5 steps. Here is how you can achieve it.

The ingredients needed to make COCONUT ICE:
  1. Prepare 397 grams /14oz can can sweetened condensed milk
  2. Take 500 grams /1lb 2oz icing sugar,sifted
  3. Prepare 350 grams /12oz desiccated coconut
  4. Get 1 few drops of pink (or other)food colouring

Spoon the coloured mixture over the top of the white layer and use damp fingers to smooth the top. Loosely cover and put in a cool place overnight to set and dry out. Mix the condensed milk with the coconut, icing sugar and vanilla extract until thoroughly combined. Spoon half of the mixture in the base of the tin and spread out evenly with the back of a spoon.

Instructions to make COCONUT ICE:
  1. Line a 20cm (8in) square cake tin with baking paper.
  2. In a large bowl,combine the condensed milk with the iceing sugar,then stir in the coconut,to form a stiff mixture.
  3. Divide the mixture in half and using your hands m,press half into the tin.
  4. Knead the remaining mixture with a few drops of colouring and dusted with icing sugar.
  5. Press this over the white layer.Refrigerate until set,then cut into squares.

Add the food colouring to the remaining mixture and blend well until it is an even pink colour. Spread over the top of the first layer and smooth out. Grease your baking tray with a little butter or coconut oil. In a large pan mix the milk & sugar together over a low heat. When the sugar granules have dissolved, add the coconut & a few drops of pink colouring (optional) to the pan.
