When the mixture becomes firm divide into two parts. Colour one half of the mixture with a few drops of red food colouring. Double-line a small plastic box with baking parchment or cling film before placing the white coconut ice in the bottom, pressing it into a bar shape.   3. I then used a spatula to divide into portions, as I found, after it sets, it can be very hard to cut up.
  4. Leave in the fridge for at least an hour to set. Keep in an air- tight container for up to two weeks, (if it lasts that long!!) Enjoy!
