The ingredients needed to make Coconut Ice:
- Get 500 g desiccated coconut
- Prepare Half a tin condense milk
- Make ready 1 large tin nestle cream
- Make ready 1 and 3/4 cups of sugar
- Get 1 tsp elachi powder
- Make ready 1 cup water Chocolate and nuts for decoration
Spoon the coloured mixture over the top of the white layer and use damp fingers to smooth the top. Loosely cover and put in a cool place overnight to set and dry out. Mix the condensed milk with the coconut, icing sugar and vanilla extract until thoroughly combined. Spoon half of the mixture in the base of the tin and spread out evenly with the back of a spoon.
Instructions to make Coconut Ice:
- Mix coconut, condense milk, dessert cream and elachi together in a large bowl and set aside. - Then boil sugar and water together to make a thick syrup - Add syrup to coconut mixture and mix well - Shape into balls and leave in fridge overnight to firm up - Dip in melted chocolate and decorate as desired
Add the food colouring to the remaining mixture and blend well until it is an even pink colour. Spread over the top of the first layer and smooth out. Take out half the mixture and push the mixture into a square tin greased and lined with clingfilm. Then grease again with your hands. Grease your baking tray with a little butter or coconut oil.
