- Take 1 cup tightly packed flesh of fresh coconut (malai thick)
- Take 1 cup whipping cream
- Take 1 cup condensed milk
- Get 1/2 cup coconut cream
Heat the milk and sugar together in a medium pan over a low heat, until the sugar has dissolved. Let the milk cool, before stirring in the cream, coconut pieces, vodka and chopped mint. Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.
Instructions to make Coconut Ice cream:
- Remove the flesh from 1 tender coconut it should amount to 1 cup, if it's less take flesh of one more coconut, keep it aside, make sure the flesh/malai is a little thick. Chopped the malai into small pieces.
- In a chilled bowl take 1 cup whipping cream (the one which already has sugar) I use rich's and beat it till it doubles in quantity and forms stiff peaks.
- Now add coconut cream & condensed milk to the whipped cream and again mix it nicely. Now add the chopped malai and give it a final mix, transfer the Icecream into airtight container and freeze it overnight or for at least 12-14 hours.
- Scoop out the Icecream and serve it chilled. Homemade natural coconut Icecream. Enjoy.
