- Make ready 375 g Icing Sugar, sieved
- Prepare 295 g Dessicated Coconut
- Get 390 g Condensed Milk
- Make ready 7.5 ml Butter, melted
- Make ready 5 ml Vanilla Essence
- Prepare Food colouring
Spoon half of the mixture in the base of the tin and spread out evenly with the back of a spoon. Add the food colouring to the remaining mixture and blend well until it is an even pink colour. Spread over the top of the first layer and smooth out. Grease your baking tray with a little butter or coconut oil.
Steps to make Coconut Ice:
- Mix icing sugar and coconut together.
- Add condensed milk, butter, and vanilla essence. Mix until ingredients are well combined.
- Divide mixture in half. Add one half of the mixture to a 30cm×22cm greased and lined pan. Pressing the mixture down until it reaches all 4 sides.
- Add food colouring to the remaining half and knead it into the mixture. Place the mixture on top off the mixture in the pan, pressing down until it reaches all 4 sides.
- Place parchment paper on top, use your hands to smooth out the mixture.
- Place mixture in a cool area and leave overnight to set. Cut into squares and serve.
In a large pan mix the milk & sugar together over a low heat. When the sugar granules have dissolved, add the coconut & a few drops of pink colouring (optional) to the pan. Bring the mixture to the boil until it start to "spit at you," stirring continuously. Take out half the mixture and push the mixture into a square tin greased and lined with clingfilm. Then grease again with your hands.
