The ingredients needed to make Peppermint Coconut Ice:
- Prepare 500 Grams Icing Sugar
- Make ready 400 Grams Desiccated Coconut
- Prepare 1 large tin (397g) Condensed Milk
- Prepare Green Colouring
- Prepare Peppermint Flavouring
Mix together the condensed milk, icing sugar and desiccated coconut in the large or medium bowl fitted with its chopping blade. Add the water through the feeder tube to bind the mixture. When the mixture becomes firm divide into two parts. Colour one half of the mixture with a few drops of red food colouring.
Steps to make Peppermint Coconut Ice:
- Put the icing sugar, then the condensed Milk, followed by the coconut, into a large mixing bowl. Mix well with a wooden spoon, pressing all the ingredients together.
- Divide into two portions, press half into a foil lined tray. Mix a few drops of green colouring and peppermint essence into the second half. Press this onto the top of the other half.
- I then used a spatula to divide into portions, as I found, after it sets, it can be very hard to cut up.
- Leave in the fridge for at least an hour to set. Keep in an air- tight container for up to two weeks, (if it lasts that long!!) Enjoy!
Double-line a small plastic box with baking parchment or cling film before placing the white coconut ice in the bottom, pressing it into a bar shape. Form the pink coconut ice into a similar shape and press firmly together. This peppermint coconut ice cream is a vegan dream!
