  2. Take Jaggery
  3. Get Coconut milk

Bottle Gourd Ice-cream is one of the varieties which might sound quirky but is mouth-watering. This easy-to-make recipe is made with simple ingredients such as milk, bottle gourd, sugar, cardamom essence, almonds and food color. It tastes best when garnished with chopped almonds, pistachios and cardamom powder. Combine the bottle gourd, sugar and cardamom powder in a non-stick pan, mix well and cook till the bottle gourd is soft and cooked and no water is left.

Instructions to make Bottle Gourd Ice-cream:
  1. Heat the water.
  2. Add the chopped bottle gourd in it.
  3. Cook it till the bottle gourd is completely cooked.
  4. Now add 1 tsp ghee and jaggery, mix well.
  5. Grate the coconut and extract the milk from that. Add it into the boiled bottle gourd.
  6. Let it be boil for 2 minutes.
  7. Once cooled, blend the mixture in a blender.
  8. Transfer it in air-tight box and store in freezer nearly 4-5 hours.
  9. Again blend in blender by adding few dry fruits and transfer to the air-tight box, store in the freezer nearly 4-5 hours.
  10. Serve the yummy chilled ice-cream by decorating with dry fruits.

Remove from the flame and keep aside to cool completely. Add the the cream and honey and whisk lightly. Pour the mixture in an air tight container and freeze till almost set. Bottle Gourd has a high content of water and thus it is good to eat in summer. Although, children don't like to it easily but if we do ice-cream they will definitely love it.
