I always have homemade rujak, mostly because if you buy it in a stall it is very spicy, at home we prefer subtler spiciness #mycookbook. Usually have jicama and use store-bought ice cream/coconut ice cream, I use banana + coconut milk in this. When ready to eat throw the banana into a food processor and whizz until smooth with enough of the milk to achieve a creamy texture. To make the ice cream, tip the frozen bananas into a sturdy food processor.

Steps to make Rujak (Banana) Ice Cream:
  1. Mash overripen bananas, mix with coconut milk (or heavy cream). Freeze. If you have a blender, you can blend once after it froze to get air inside, other wise just scoop it later. (this is at least 2 hours before serving)
  2. Boil water, add tamarind, sugar, and chili powder. Add peanut butter. Wait until it boils, correct the taste (it should be sweet and spicy). After it cools, put it in the fridge.
  3. Just before serving, grate the cucumber, pineapple, and mango. Set them inside 4-6 bowls. Scoop about 1-2 tablespoon of peanut sauce for each serving. Add the banana ice cream (or store brought ice cream, preferably coconut ice cream or vanilla, but chocolate is good for more funkier taste) on top.
  4. Enjoy getting your taste buds confused, joking aside, the spiciness and the ice are interesting for first timer

Blend on the pulse setting until the bananas become finely chopped, then whizz into a very thick, creamy purée. Whizz in a blender or food processor with the sugar and lemon juice. Peel and cut the bananas into small pieces. Place the bananas, honey and brown sugar into a pot and cook over low heat for it to slowly caramelise. Pour in the cream, milk and vanilla extract and stir slowly, then increase the heat and stir to combine.
