Ingredients in Chicken Masala: While there are many different styles of chicken gravies cooked in different parts of the country, this one has spicy chicken curried in tomatoes and a variety of. Chop the onion, and seed and chop the chilli. Add the prepared ginger, garlic & green chili paste. Add the chicken breasts and stir well to coat in the paste.

Instructions to make Masala chicken:
  1. Heat a heavy pan and put some olive oil or ghee. Add cumin and coriander seeds. Let spurt. Add bay leaves and cloves.
  2. Put onions in the pan and cook until golden brown.
  3. Add chopped chillies,ginger garlic paste and stir.
  4. Add tomatoes mix for 5 mins and add all spices.
  5. Cook until it leaves oil.
  6. Add chicken to the pan and mix well. Pour water or stock and mix again.Let it sit on medium heat and stir gently once in between. Keep on medium heat until chicken is cooked, usually takes 25-30mins.
  7. Once chicken is cooked sprinkle fenugreek leaves and garam masala.
  8. Serve with Indian Naan bread or Roti.

In a large frying pan, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Combine the cubed chicken with the yogurt, lemon juice, garlic, ginger, salt, cumin, garam masala, and paprika and stir until well-coated. Line a high-sided baking pan or roasting tray with parchment paper.
